Royal Beauty Apple and Cinnamon Muffins

Summer is here and our South African Royal Beauty apples are showing off their brilliant red colour and signature stripes in the orchards. Now is the perfect time to whip up something delicious in the kitchen using these apples that are as perfect eaten fresh as they are used in baking. These muffins are excellent lunchbox treats or perfect with a hot cup of tea. 

Simple Cinnamon and Apple Muffins

Ingredients:

Muffins: 1.5 cups all-purpose flour; 3/4 cup white sugar, 2 tsps baking powder, 1 tsp ground cinnamon, 1/2 teaspoon salt, 1 large egg, 1/3 cup vegetable oil, 1/3 cup milk, and 2 cups Royal Beauty apples (peeled, cored and chopped into small pieces). Topping: 1/2 cup white sugar, 1/2 cup butter (cubed), 1/3 cup all-purpose flour, 1.5 tsp ground cinnamon

Method:

Preheat the oven to 200’C. Grease 6 large muffin cups or 12 small muffin cups.

Mix the eggs, oil, milk and beat until light and fluffy. Add the flour, sugar, baking powder, cinnamon and salt to teh wet mixture and stir until combined. Add the chopped apple to the mixture and stir until nicely coated. Pout the batter into the prepared muffin pans. 

Make the topping by mixing all the ingredients together with a fork until crumbly, and then sprinkle generously over the muffins.  

Bake in the pre-heated oven for 20 – 25 minutes or until a toothpick comes out clean. Voila! Your Royal Beauty muffins are ready to be enjoyed 🍎
